Friday Evening Yumminess

David requested something "different" for Sabbath lunch this week - sandwiches and fruit soup. So, this afternoon I ventured into the kitchen to create a fruit soup that we would both enjoy. David came home, smelled the amazing aroma coming from the kettle, and just couldn't wait, so the fruit soup part of our Sabbath lunch was relegated to this evening. We all declared it a scrumptious success!

Summer Fruit Soup

3 cups chopped strawberries
2 cups chopped pineapple
2 cups peaches
2 mangoes, chopped
Zest of lemon and lime
2 Tbsp orange peach mango juice concentrate
1/2 cup sugar
Fresh juice of one lemon
Fresh juice of one lime
1 cup blueberries
2 kiwi
1 cup raspberries

Directions:

Simmer all ingredients except blueberries, kiwi, raspberries, and one mango. Once it reaches boiling, take off the stove and blend in food processor or blender till smooth. Pour into shallow bowl and add the rest of the fruit. Cool in refrigerator. Serve with mint sprigs for garnish.

Note: Since obviously it's not summer, I used frozen fruit and modified the original recipe significantly. Here's the original: http://www.foodnetwork.com/recipes/emeril-lagasse/summer-fruit-soup-recipe/index.html

Katie's New Trick

This weekend Katie learned how much fun it is to jump and land on your bottom. She entertained herself for quite a long time!

Test

Surprise! I'm actually trying to learn something new in the computer realm, versus leave it all to my geeky husband. It took me several minutes to even figure out how to edit something on our blog, but I think I've figured that part out. When we sat down to look at our blog, I was shocked to see it had been almost 4 whole years since our last post. I assure you we will be posting more than once every 4 years from now on! Here's a picture our our two little cherubs. They wanted to be "burritos" one evening last week.

Sometimes...

Unfortunately, the times that Ethan seems most angelic are usually when he is sleeping. It is fun watching him learn to interact with his world when he's awake (and not crying), but the melt-your-heart moments are definitely when he is fast asleep without a care in the world. Moments like this make all the hours of lost sleep worth it a thousand times over.

Fatherhood...

There is nothing quite like a new baby to put your entire life into perspective and make you think about the things that are truly important. God gives you a gift - a little life that is a blank slate. What will you write on it?

So much for a girl's name...

Yes, it's official, she's a he. And, he was due yesterday. We are expectantly expecting and a little impatiently waiting as Christmas, a new year, and parenthood are reaching critical mass.
